Hope’s Kitchen Meatloaf

Here's the meatloaf recipe hungry people look forward to at St. Mary Church's parish ministry in Siloam Springs. “When meatloaf is on the menu, we always serve more meals,” Marie Rollins, founder of Hope’s Kitchen, said March 3.

2 eggs lightly beaten

3/4 cup 2% milk

2/3 cup finely crushed saltines crackers

1/2 cup chopped onions

1 teaspoon salt

1/2 teaspoon Cavender's Greek Seasoning

1/4 teaspoon black pepper

2 1/2 to 3 pounds ground beef

1 cup ketchup

1/2 cup brown sugar

1/2 cup mustard

1 teaspoon Worcestershire sauce

In a bowl combine the first eight ingredients, mix well and pat into loaf. Bake at 350, uncovered, for one hour. To make the topping, mix the ketchup, brown sugar, mustard and Worcestershire sauce. Add half the topping and bake for another 10-15 minutes. After removing from the oven, spread remaining topping. Let rest for 10 minutes before slicing.

Serves 6-8
